I have always found colour psychology/theory quite interesting. I can vaguely remember first been introduced to the subject in Media in context many years ago at college. It is a matter which has been studied by many, artists, philosophers and scientists in the past and although the findings do appear to be culturally dependent colour still appears to be an incredibly strong communicator. Apparently you can tell what a persons personality traits are by assessing their favorite colours or you can affect a persons mind & body by changing the colour of their surroundings, for example fast food restaurants are said to use shades of pink or yellow as this excites meaning you will eat quicker and spend less time taking up seats (nicer restaurants can use burgundy), blue however is an unpopular colour for restaurants as it is said to relax meaning you stay longer.

I've recently read Colour Source Book. This is a good reference book for any designer as it gives good background and contextual information about colours and is organised in a way which makes it easy to look up and pick out the required data.
