I now pretty much know how to do everything I wanted to do in my site and more.

Saving data to a users machine, things like preference can be done with shared objects.
Grouping information together can be done with objects, generic objects or xml objects.
Saving data from flash can be easily written to external text files, xml files or best practice is to use a mySQL database.
Content can be placed onto the stage of attached to movieclips using actionscript.

I now also have a hefty collection of games together. I'm going to carry on learning and maybe even finish the site one day!!!
